Are your mornings crazy? Yep, thought so. Us too. So I try to do as much as I can ahead of time to save us a little sanity. One of those things is breakfast — in the form of oatmeal and eggs. The oatmeal is a little self-explanatory (I think?) but the eggs take a little creativity.
I feel a little guilty calling this a recipe, since it’s so simple. Here’s what you need:
- 14 eggs
- 1 cup chopped veggies (I usually use peppers, onions and mushrooms — but throw in whatever you like! We’ve also had good luck with tomatoes and jalapenos)
- Salt and pepper to taste
- 1/2 cup shredded cheese
Spray an 8×8 pan with cooking spray. In a bowl, crack all 14 eggs and beat together. Add in chopped veggies and salt and pepper. Pour into the dish and top with the cheese.
Bake for about an hour in a 350 F oven (oven times vary, so start with 30 minutes and go up from there).
You can either serve immediately, or let it cool and store in the fridge for the week. My husband likes to take a few slices, nuke them in the morning and add avocado and hot sauce. MmmmMMM.
