I’m all about having a healthy delicious lunch at work. What I’m not all about it taking a lot of time at home to make it. I figure that I already spend a lot of my time at work, so why spend more time than necessary at home getting ready?


This recipe lets me dump everything in a pot and be on my merry way.

Here’s what you need:

  • 1 package drumsticks (mine had 9 pieces)
  • 1 medium onion
  • 1 pound of carrots (baby, or chopped into baby-sized pieces)
  • 1 package steamable broccoli
  • 1 tablespoon garlic
  • 3/4 cup teriyaki marinade (I like Aldi’s)
  • 1 cup water
  • Sriracha
  • Sesame seeds for garnish (optional)


Let’s do this!

Slice the onion into quarter-inch or less pieces, and then cut those in half again. Scatter them on the bottom of your slow cooker:


Dump in your baby or chopped carrots:


Take the skin off your drumsticks and place on top of the veggies:


Removing the skin is optional, but it makes it so much easier to get to the meat after the chicken is cooked.



Mix up your sauce. Combine the teriyaki marinade, water, garlic and Sriracha in a bowl and whisk away. The amount of Sriracha will depend on how spicy you like your food. I probably added about a teaspoon.

Pour it over top everything:


Cook on low for 6 hours. Right as it’s finishing up, steam your broccoli to serve along side. I would not recommend cooking the broccoli in the slow cooker, as it gets awfully mushy (not that I would know from experience or anything).


Serve with the carrots and onions with a few sesame seeds sprinkled on top to make it pretty!


This easy and delicious recipe makes a great dinner or lunch (or I guess breakfast…whatever floats your boat). I hope you enjoy!
